CEYNDULGENT Ceylon Cinnamon; to make a difference…

She shared her experience as well as her recipe; using CEYNDULGENT Ceylon Cinnamon in her Cinnamon Apple Cake.
She says; “Apple and Ceylon Cinnamon – the classic combination in UK”.
Her Cinnamon Apple cake had become to be deliciously soft and tender featuring a crunchy cinnamon topping.

The Cinnamon Apple Cake Recipe:
INGREDIENTS
210 g plain flour
150 g caster sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup -approx 1 large apple, peeled and roughly chopped
2 large eggs
1 teaspoon vanilla extract
120 ml vegetable oil
120 ml plain yogurt

Cinnamon topping
50 g caster sugar
1 teaspoon ground cinnamon
1 tablespoon unsalted butter, melted

INSTRUCTIONS

  • Preheat oven to 180C standard / 160C fan-assisted. Grease and line an 8 inch round cake tin with baking or parchment paper.
  • In a large mixing bowl, add flour, baking powder, baking soda and sugar. Add chopped apple and stir briefly to combine. In a separate bowl, add eggs, vanilla, oil and yoghurt. Whisk briefly just to break up the egg yolks.
  • Add wet ingredients to dry ingredients and gently mix until well combined – do not over mix. Spoon the batter into the prepared tin.
  • To make cinnamon topping, combine cinnamon, sugar and butter. Mix together until lumpy and wet. Spoon it over cake batter as if you were drawing a spiral.
  • Bake cake for approximately 30-35 minutes or until a skewer inserted into the middle comes out clean. Transfer cake to a wire rack to cool.
  • Dig into a slice of an indulgent apple and cinnamon cake…… bon appetit :))
